One hundred years from now
It won't matter who you thought you were,
Who I thought you were,
How much money you had,
What kind of truck you drove,
How many cattle you had,
Or how many bulls you rode,
Nor who yer daddy was,
But it will matter if you knew Jesus.

Shrimp Scampi Pasta

My sister-in-law gave me this recipe for Shrimp Scampi Pasta the other day and we had it for supper tonight. It was yummy!! And EASY!!
{poor pic..from cell phone..and this was Landon's serving, so we of course had more shrimp in ours}
1/4 cup olive oil
1 lb peeled, deveined large shrimp
4 large garlic cloves, left unpeeled and forced thru garlic press
(i just used chopped garlic in a jar from h-e-b)
1/2 teaspoon dried hot red-pepper flakes
(i used more)
1/2 cup dry white wine
(i used white cooking wine)
1 teaspoon salt
1/2 teaspoon black pepper
5 tablespoons unsalted butter
3/4 lb capellini (angel-hair pasta)
1/2 cup chopped fresh flat-leaf parsley
(i didn't use, because i didn't have any :))
Bring 6 to 8 quart pot of salted water to a boil.
Meanwhile, heat oil in a 12 in heavy skillet over moderatly high heat until hot, but not smoking. Then saute shrimp, turning over once, just until cooked throug,, about 2 minutes, and transfer with a slotted spoon to a large bowl.
Add garlic to oil remaining in skillet along with red pepper flakes, wine, salt, and pepper and cook over high heat, stirring occasionally, 1 minute.
Add butter to skillet, stirring til melted, and stir in shrimp. Remove skillet from heat.
Cook pasta in boiling water until just tender, about 3 minutes.
Reserve 1 cup pasta-cooking water, then drain pasta in a colander.
Toss pasta well with shrimp mixture and parsley ina large bowl, adding some reserved cooking water if necessary to keep moist.
